Grown at a family farm and processed by budding coffee farmer Ate Mares Sultan, this batch of hand picked cherries underwent fermentation for 5 days before being transferred to raised drying beds. The coffee was then turned every hour or two every day, depending on the sun and heat to ensure an even drying.
After de-hulling at a community station, the green beans were carefully hand sorted by Ate Mares herself.
Best brewed on pour over, this cup gives a fruity brightness and fragrance reminiscent of Philippine sweetened langka (jackfruit), a comforting milk chocolate body, and ends on a crisp note - like biting into a fresh apple.
